12 oz cream cheese, softened
5 cups powdered sugar
1 tsp peppermint extract
Red food coloring

Top Layer
Beat eggs and cream cheese together until smooth. Gradually add the powdered sugar, taking time to mix in before adding more, until all is incorporated.
Add the peppermint extract and red food coloring until the desired shade of red is achieved. Once complete, pour mixture on top of the bottom layer in the 9x13 pan.
Bake for 35-40 minutes until top is golden brown.
Allow cake to cool and then dust it with powdered sugar.
SPECIAL NOTES
Flavor of cake mix can be vanilla, depending on preference. Recipe works with gluten-free cake mix as well.
Powdered sugar is the traditional topping, but feel free to top with sprinkles or crushed candy canes!
